Meet Ceallach
My interest in Irish and British cookery grew while working as a chef in an Irish restaurant. I became intrigued by the history, regional differences, and cultural traditions behind the dishes—a connection made more personal by my own background. Several trips to Ireland and Northern Ireland inspired me to dig deeper into their food and culture.
In 2014, after seven years at the restaurant, I decided it was time to move on. It was preparing to become an Irish pub, and with my children still young, I wanted to keep my evenings with them.
A Kilt and a Cuppa began soon afterward as a blog, sharing recipes I had developed over the years. I eventually turned to video because I preferred showing the cooking process. Inspired by the early, faceless format of Binging with Babish, I found a way to share the food with the cooking itself taking centre stage.
Through A Kilt and a Cuppa, I want to show that many foods you might buy in a pub, from a British food shop, or online can be made at home with a little effort. I also enjoy studying pub and restaurant menus and creating my own versions of the dishes.
Along the way, I explore the history, places, and people connected to the food. There is always another recipe to try and another story to discover.
